Sausage Chili Stew
Made this great dish last night, for fewer than ten dollars. Family loved it and they were all looking for more. So warm and filling for a cold autumn night.
Ingredients
1 Tbsp Vegetable Oil
1 Onion diced
3 Cloves of Garlic minced
2 Celery stalks chopped
1 Tbsp Chili Powder
1 Tbsp Cumin
6 Hot Italian Sausages
1 Green pepper diced
2 Potatoes cubed
1 Can of diced tomatoes (28 oz. undrained)
1 Cup Kernel corn
1 Can Kidney Beans (19 oz.)drain, rinse
1 Cup Chicken Stock
Fresh ground pepper
Start by cooking your sausages. While sausages are cooking prepare your onions, green pepper, garlic and celery. Heat oil in a large pan, then add onions, green pepper, garlic and celery and cook for about five minutes. Add chili powder and cumin, stir and cook for about a minute. Add tomatoes, kidney beans, potatoes and chicken stock. When sausages are cooked cut into bite sized pieces and add to the pot. Add your corn and fresh ground pepper. Bring all ingredients to a boil then turn down the heat to a simmer and cover. Cook about thirty minutes or until potatoes are tender. You can add a salad or Italian loaf to complete this meal.
That looks good, especially during the cold winter. I'm going to try it with the mild sausage because we're all wimps over here:)
