PORK STEW
Never making this type of stew before I was not sure how it would turn out. While grocery shopping I found a package of pork tenderloin cut into chunks. Right away stew came to mind. It did taste pretty good, so I will share this recipe on how I made it. The ingredients may not be totally accurate as I did not write them down while creating this stew.
3- 4 pounds pork cut into bite sized pieces
3 large carrots chopped
3 stalks of celery chopped
1 large onion chopped
4 potatoes cubed
1 can of red kidney beans1 cup corn
1 can peas
3 garlic cloves pressed
2 cups of chicken stock
1 bay leaf
1/4 Tsp of thyme
1/4 Tsp marjoram
2 Tbs vegetable oil
flour to dredge pork in
salt and fresh ground pepper
Mix in a bowl the following: 1/4 cup of flour, salt and fresh ground pepper. Dredge your pork pieces in the mixture.
Heat about 2 Tsp of vegetable oil in the bottom of a large pot. Add pork and cook stirring frequently until cooked. Add onions, celery and chicken stock and bring to a boil. Add carrots and potatoes. Add bay leaf, thyme and marjoram and stir. Press garlic into the stew mixture. Cook on medium low heat for about an hour stirring occasionally. About fifteen minutes before you are ready to eat add canned peas drained, canned kidney beans drained and rinsed. Serve with either a salad or french bread. Yields enough for five to six people.
