Usually whenever I make chicken breasts for some reason I always serve rice as a side dish. Last night I wanted potatoes. But not boiled or microwaved potatoes, and not baked. I knew I had fries in the freezer but I wanted something I could cook in the oven at the same time as the chicken.
Then a light went off in my head and I remembered my cousin making roasted potatoes in a dish in the oven. She would always making them with a ranch type dressing. Of course I had to be different .... anyways to get to the point here's the recipe.
Ingredients
4-5 medium size potatoes of your choice. I used Yukon Gold.
4 tbs of extra virgin olive oil
garlic powder
Greek seasoning
Slap Ya Mama Cajun pepper seasoning
Cooking Spray
Instructions
Preheat the oven to 350 degrees F.
Wash the potatoes and cut into chunks. I leave the peel on the potatoes whenever possible as there are many nutrients in the peel. If you'd like to read more about these nutrients I have an article about all the benefits called Potatoes And Potato Peels Antitoxins Health Benefits
Spray an oven safe dish with cooking spray and set aside.
Add the potato chunks into a bowl or a plastic bag. Add olive oil and mix with the potatoes making sure that they are well coated.
Place the potatoes into the oven safe dish and season generously with garlic powder, and Greek seasoning.
Place in the oven for 40-45 minutes. Check occasionally and give the potatoes a stir in the dish.
Remove from the oven and sprinkle with either Slap Ya Mama Cajun pepper seasoning or salt.
ENJOY!
You can get creative with your spices for this dish. Perhaps add thick slices of onions with chopped garlic to the mix. During the last fifteen minutes of cooking time toss in some green peppers.
Simple dishes like this can really make a meal. You mentioned adding onions. Onions sautéing in the kitchen is an aroma like no other. Delicious! Will see about finding the spices for this. Thanks! Marisa
