Beer Can Chicken

This recipe is one of my all time favorites. The chicken when done this way comes out juicy and full of flavor. You can make this on the barbeque or in your oven. I use beer cans along with a beer can device made especially for roasting chickens. You can however just use the beer can alone.

Drink half the beer that is in the can. Wash the outside of the beer can without spilling the beer left inside.  Add spices into the can, I like to use Montreal Chicken spice or Cajun Spice. About one tablespoon will do. Rinse off your chicken then season the inside of the cavity and rub your spices on the outside of the chicken. Place the beer can into the device. Firmly push the chicken onto the beer can via the large cavity.

Set your barbeque temperature on medium high on the right and left burner leaving the middle burner off allowing the chicken to cook in the center of the barbeque with indirect heat. I use a foil pan under the chicken for easy clean up. Place the foil pan on the grill in the middle of the barbeque. Set either one or two chickens that you have prepared on top of the foil pan. Close the lid of the barbeque. No basting is needed as the juice flows down the chicken as it cooks. Chicken is done when a meat thermometer reaches 180 degrees F placed in the breast of the chicken. To make this in your oven cook at 325 degrees F until thermometer reaches 180 F.

Remove from oven or barbeque and carefully with gloves on remove your chicken.

Another way in which I prepare the chicken is to place sliced garlic cloves under the skin of the chicken. This makes a very flavorful chicken.
